With the day for lovers just around the corner, I wanted to share something you can fix for that someone special. It’s a Passion Fruit cocktail that’s a perfect addition to that treat you plan on giving your sweetheart this Valentine’s Day. *wink*

This month is also extra special to me. Passion Fruit Cordial

Ingredients
  • 1 cup white sugar
  • 1 1/2 cups water
  • 1 cup fresh lemon juice
  • 1 cup fresh passion fruit pulp (about 12 passion fruit)
  • Sparkling white wine (chilled)

Place the sugar, water, and lemon juice in a saucepan over low heat. Cook, stirring, for 5 minutes or until sugar dissolves. Increase heat to medium and bring to boil. Simmer for 5 minutes or until syrup thickens slightly. Stir in passion fruit pulp. Set aside for 30 minutes to cool.

Strain syrup through a fine sieve into a jug, pushing pulp through with the back of a spoon. Discard seeds. Pour syrup into an airtight bottle and seal. Place in fridge to chill.

Divide ice cubes among serving glasses. Add passion fruit cordial to taste and top with sparking white wine to serve.

If you want to make a “virgin” version of this cordial, simply replace the sparkling white wine with sparkling water. You can also save time by using canned passion fruit pulp instead of fresh.

Prep time: 10-40 mins.  Cooking time: 10 mins.  Makes 3 cups.
